lemon cornmeal waffles
1 1/4 cs +2 T flour
2 t baking powder
1 t baking soda
1/2 t salt
3/4 c cornmeal
1/4 c canola oil
2 c almond milk
1/4 c soy yogurt
zest and juice from 2 lemons
2 T agave syrup
In a large bowl, combine the flour, baking soda, salt and cornmeal together. In another bowl, mix together the oil, almond milk, yogurt, lemon juice & zest and the agave syrup. Pour the wet ingredients into the dry and gently fold together until just mixed. Use a small ladle to pour batter onto your prepped waffle maker and proceed in your usual waffle-making style. Serve with maple syrup and fresh fruit.
